Mr. Lemon and I live on a block that is, unfortunately, a bit of an anomaly in how friendly the neighbors are. Our block hosts an annual party where we close off the street for the day and the kids ride their bikes down the middle of the road. Every year, we have a holiday get together to get out of our Michigan hibernation and catch up. On any given night in the summer, a half dozen children will be running through lawns, their parents congregated on a porch to chat the night away. Especially during the summer, I see these neighbors more than my other closest friends. It’s so refreshing to have a group that truly cares about one another and looks out for each other – one that isn’t “family” but treats each other as if they were.
When we get together for movie nights (yes, we do that too), a dozen kids and adults lounging in someone’s living room , Peanut Butter Delight is the snack of choice for everyone. We all have our own favorite way to make it – different cereal preferences, adding a cup of sugar, topping with chocolate chips, but this is my personal variation. Quick, easy, and DELICIOUS!
Peanut Butter Delight (aka PBD)
1 cup of Caro Syrup
1 cup of Peanut Butter (can be smooth or chunky)
6 cups of Cereal (“Puffed” or Corn cereals seem to work best)
Measure cereal into a large mixing bowl.
Heat Caro Syrup over medium heat in a frying pan, continuously stirring until it reaches a watery consistency.
Add peanut butter, still stirring until thoroughly combined.
Pour peanut butter mixture over cereal, mixing until coated.
From here, you can simply dish into individual serving bowls, eat out of the large bowl, or put into a greased 9×13 pan.

PBD is the best! This is the best variation too! You wouldn’t think a little cereal and some peanut butter could combine to be something so tasty!
