It’s Pi Day, Pi Day, Gotta Get Down on Pi Day

Sorry, that title is obnoxious.  But it’s been in my head all day because today it is 3.14!  (March 14th = 3.14 = Pi…for anyone who is still having a tough time springing forward such as your’s truly.)  Next year when Pi Day falls on a Friday…look out because it will be ca-razy up in here!  And by ca-razy I mean that I might actually make a pie for it.

So, in honor of this mathematically delicious day, here are some pie recipes from the interwebs…

Mr. Lemon and I made this Caramel Apple Pie from the Best Remedy TWICE over the holidays.  It was that good people.

But pies aren’t just for fruit!  How about these Caramel Brownie Whoopie Pies from Camille Styles?  They look amaaaazing.

This Mediterranean Pizza Pie from Simply Scratch has been making my mouth water for awhile now.  It has homemade roasted red pepper sauce!

Chicken Pot Pie is one of Mr. Lemon’s favorites that I haven’t made since we started eating more “real” food (our old recipe used a lot of heavily processed ingredients), so this recipe from Maria Erin Photography looks like a good one to try!

And here is my personal go-to blueberry pie recipe.  Classic, easy, mouth-watering.

  • 3/4 cup white sugar
  • 4 tablespoons flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 cups fresh blueberries
  • recipe pastry for a 9 inch double crust pie
  • 1 tablespoon butter
  • 1 tablespoon lemon juice

Preheat oven to 425 degrees F (220 degrees C).

Mix sugar, flour, salt, and cinnamon.  Add blueberries and mix to coat.

Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Add top layer of pie crust (or do the lattice thing if you’re fancy like that).  Crimp and flute edges.

Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.
